HARD BOILED EGG CHOCOLATE CHIP COOKIES

INGREDIENTS:
- 2-3/4 cups all-purpose flour (12.4-oz)
- 1 cup unsalted butter, cubed
- 1 tsp salt
- 1/2 tsp baking soda
- 3/4 cup sugar
- 1/2 cup brown sugar
- 2 hard-boiled eggs, chopped
- 1-1/2 tsp vanilla extract
- 1 (12-oz) package semi-sweet chocolate chips
- 3/4 cup toffee bits
INSTRUCTIONS:
- Preheat oven to 350ºF.
- Combine flour and butter in the food processor. Pulse until mixture is mealy and coarse. Add the salt and baking soda and pulse to mix.
- Add sugars, vanilla and hard-boiled eggs to the food processor. Pulse just until the mixture begins to come together. Stir in chocolate chips and toffee bits by hand.
- Scoop cookies with a medium scoop and place on cookie sheet.
- Bake approximately 13 -15 minutes or until cookies are lightly browned on the edges. Allow cookies to cool on the cookie sheet for 5 minutes and then transfer to a cooling rack.
