HARD BOILED EGG CHOCOLATE CHIP COOKIES

INGREDIENTS:
  • 2-3/4 cups all-purpose flour (12.4-oz)
  • 1 cup unsalted butter, cubed
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 2 hard-boiled eggs, chopped
  • 1-1/2 tsp vanilla extract
  • 1 (12-oz) package semi-sweet chocolate chips
  • 3/4 cup toffee bits

INSTRUCTIONS:

  • Preheat oven to 350ºF.
  • Combine flour and butter in the food processor. Pulse until mixture is mealy and coarse. Add the salt and baking soda and pulse to mix.
  • Add sugars, vanilla and hard-boiled eggs to the food processor. Pulse just until the mixture begins to come together. Stir in chocolate chips and toffee bits by hand.
  • Scoop cookies with a medium scoop and place on cookie sheet.
  • Bake approximately 13 -15 minutes or until cookies are lightly browned on the edges. Allow cookies to cool on the cookie sheet for 5 minutes and then transfer to a cooling rack.
