CHOCOLATE CHIP CUPCAKES (WITH MINT FROSTING)
INGREDIENTS
- 1 cup Butter Unsalted, Room temperature
- 1 3/4 cups Granulated sugar
- 4 Eggs Large
- 2 tsp Vanilla extract
- 1 cup Whole milk Or buttermilk
- 3 cups Cake flour
- 2 1/2 tsp Baking powder
- 3/4 cup Mini chocolate chips
- 3-4 cups Mint frosting
INSTRUCTIONS
- In a large mixing bowl, cream together butter and sugar until light and fluffy.
- Add eggs, vanilla extract, milk and mix until smooth.
- Add cake flour, baking powder and mix until just combined.
- Coat chocolate chips in 2 tsp flour and gently, stir in chocolate chips into the batter.
- Pour batter in cupcake liners.
- Bake at 350 degrees F for 15-16 minutes or until an inserted toothpick in the center comes out clean.
- While the cupcakes are baking, prepare the mint chocolate chip frosting.
- Allow cupcakes to cool down completely.
- Then, frost the top of each cupcake with frosting. Enjoy!
